Lemon Pork chops with spring salad

for the grilled pork chops:

4-6 pork chops
clilli flakes
salt& pepper to taste
olive oil
lemon juice

for the spring salad:

lettuce
cherry tomatoes
radish
boiled beetroot
grated carrot
capers
balsamic vinegar
olive oil
salt&pepper
croutons

Yiaourtopita (Greek Yogurt Cake)

This cake reminds me of a schoolmate of mine who used to bring this every year to national school on her name-day (in Greece we celebrate birthdays as well as name-days). While everyone else bought ready-made cakes from the local patisseries, my friend persisted in bringing her mother's home-made delicious yiaourtopita:

180 grams. unsalted butter, room temperature

250 grams. sugar

3 eggs

1 teaspoon vanilla essence

300 grams. plain all-purpose flour

1 tablespoon baking powder

pinch of salt

250 grams. Greek yogurt

Preheat the oven to 180 degrees while you butter and flour a 24 cm. tin. In a bown beat the butter and sugar together, add the eggs one at a time, then the vanilla and beat well. Add the flour, baking powder and a pinch of salt along with the yogurt. Beat until thick and smooth. Place mixture into the tin.

Bake the yiaourtopita for 45 minutes, insert a skewer/knife into the centre and make sure it comes out clean. Do not overbake the cake as it should be moist (due to the yogurt). 

Cool into the tine for 10-15 minutes before you cut it in slices and serve it.

Sprinkle icing sugar on top or make syrup (1 cup of water, 2 cups of sugar, a rind of lemon).

There is a certain sense of awe an unoccupied house can inspire. Especially when this house once belonged to people you knew and loved dearly. As Palamas lyrically laments, the specters of those physically "gone" from it, are still there, making the house lose its materiality and become a home, or even a person.

The Garrett family home, built on the turn of the 20th century, opened its closed doors allowing me to capture in film the beauty of time's passing, its decadence and healing power. Every room is a family story inscribed on wallpaper, furniture and decorative miniatures. War, emigration, childhood memories, carefree summer holidays in the Irish countryside, weddings, anniversaries, first Communions, postcards from the relatives in the US, absences, God's omnipresence. Striking is the sense of an unwavering religious faith in every corner, from bedroom to kitchen. 

As I share its intimate soul with you, the need to celebrate a life lived becomes urgent, even after life.

Easter was spent in County Sligo, Ireland following golfer Gavin Howley, the man behind Arcane and Lion Lettings, and his instructor Keith O'Neill. From the Sligo Golf Academy to the County Sligo Golf Club, we learnt that golf is not only one of the most popular sports in Ireland but also that the country boasts a few of the best golfing clubs internationally with visitors from all around the world. It can be a lot of fun, but it also demands a lot of concentration, dedication, and if you decide to take it up in Ireland, endurance (the cold weather is to blame). We were lucky to golf on a sunny day with splendid sea views to the Atlantic ocean heralding the advent of spring.
